Marc LeBlanc, Executive Chef at Greys Restaurant has just returned
from traveling in Eastern Canada and diving in Belise to create a new
menu for Summer 2008. Marc was born in New Brunswick and worked
all over the Maritimes and Alberta and BC. Marc joined the Lodge in 2005 and has
changed and improved the menu ever since. Marc's inspiration
behind this summers menu has been taken from all over the world, hence the"Flavours of the World" Tuesday menu. The Thursday night Tasting menu has been improved to use only the best Canadian produce and we he has introduced a 4.00pm - 6.00pm "Early Bird menu" specifically designed with light meals, hors d'oeurves and a few childrens meals in mind.
Marc says that Thursday is his favorite day to cook, due
to the freedom this allows him to really
excel while using the freshest local ingredients.
